These are not general surveys, but works on specific topics or issues, and all of them are quite good. /1 - 1/ Rise and Kill First by Ronen Bergman - This is a history of Israeli targeted assassination programs, from the pre-state days to the near-present. Bergman is an Israeli journalist w/fantastic high-level sources. There are 100 stories in this books that could be movies. JMN Jeffries book on the same topic is also good (but over 700 pages).
